Lichee Black Tea & Lacy Oatmeal Cookie

My good neighbor and very good friend Debbie brought over these ah-mazing Lacy Oatmeal Cookies yesterday. They were crispy, salty and sweet, so many great flavors and textures in your mouth at once. And this is my new favorite tea, a florally black tea that begs to be served in delicate little cups.

DEBBIE'S LACY OATMEAL COOKIES
1/2 cup soft butter
1 cup white sugar
1 egg
3 tbsp flour
1/2 tsp baking powder
1/2 tsp salt
1 cup oatmeal
1 tsp vanilla

Cream softened butter with sugar, then add egg. In another bowl mix flour, baking powder, salt and oatmeal. Combine dry mix with wet mix and add vanilla. Drop only 1/2 tsp of dough 2" apart on foil-covered baking sheet and bake at 350° for 10 minutes until browned. Let cool and peel off foil.
