For this year's lake trip, we invited our Supper Club friends along. Which meant that packing plenty of food and adult beverages were of more importance than the latest swimsuits or accessories. Each couple picked a meal to cook and we tried to eat lots of fruit and veggies. Part two of the lake weekend is all about the grub.

Friday Night // Tim & Lynn // Barbecued ribs, burnt ends and turkey sausage with quinoa and grilled zucchini. I chimed in with some sliced green mango and my fresh hot sauce. Tim trucked down his own Weber and immediately started that intoxicating smell of charcoal on the grill. It was my favorite meal of the weekend and we had enough to send a plate to Ruben, the resort's owner. The next day Ruben confessed that he had just eaten dinner, he was only going to take a bite and do a little taste test. He ended up eating the whole thing! As our full bellies and sticky fingers will tell you, the rest of us were all in complete agreement, it was a fucking awesome dinner. Afterwards, we devoured Rachel's special lake brownies. Saturday Breakfast // Rachel & Seth // Breakfast casserole, pancakes, bacon and fresh fruit. The hot sauce made a reappearance! I made a gazpacho-style Bloody Mary mix that was not super; next time, I'll make it much easier on myself and just buy it. Saturday Lunch // Linh & George // Gazpacho soup and sandwich fixings. Make your own and serve yourself. I made my sandwich with two pieces of Farm to Market bread and filled it with loads of fresh veggies, sprouts, tomatoes, onion, peppers. George's was on potato bread with mayo and cheese. I was prepared to not like George's sandwich because it looked so plain, but it was actually quite good.

Saturday Dinner // Jeanne & Craig // Grilled hot dogs with Hormel chili and cheese, fresh veggies and dip. I went with pickles and peppers for a faux Chicago dog instead of chili and cheese. For dessert, beer and race track snacks! With the family pass at the race track, you get half off on funnel cake. Sunday // Leftovers // For breakfast we cleaned up the rest of the ribs, burnt ends, pancakes, breakfast casserole and fresh fruit. At lunch, we made more sandwiches, and snacked on Durian chips, dried cuttle fish and pimiento cheese. I was worried that we had way too much food, but we packed just the right amount.
